If you play as Cora, you can switch to Summoner at level 30. I think someone said you get one summon for free when you do it. The other summons can be bought from the spell NPC (the last 3 in the list).

I'm guessing you have seen someone with a summon since you're asking. I'm going Summoner at level 30. I'm level 27 at 60% now but soloing is so darn slow. >.<
