The tutorial you can go through when just having created a character is of much help and explains things like this very well. ;)
Your spells are in the F window. Alt+click or drag the icons of the spells you want to use to your "skill bar (it can hold all sorts of stuff)". Then use the corresponding F key to activate them. When attacking with spells you can either press the key first and click a monster or click the monster and press the key. After selecting a monster every spell you fire off will directed to the target until it is dead or you you target another monster.
